Recipe of the Month: BLT Bow Tie Pasta Salad Ingredients:2 1/2 cups uncooked bow tie pasta6 cups washed and torn romaine lettuce1 1/2 cups cooked chicken breast, cubed1 medium diced tomato4 strips turkey bacon, cooked and crumbled1/3 cup reduced fat mayonnaise1/4 cup water1 1/2 tsp white vinegar1 Tbsp barbecue sauce1/4 tsp black pepper Directions: - Cook pasta according to package directions, ommitting salt. When tender, rince under cold water and drain.
- Ina large serving bowl, combine pasta, lettuce, chicken, tomato and bacon.
- In a small bowl, whisk: mayonnaise, water, barbecue sauce, vinegar and pepper. Pour over pasta mixture and gentily toss to mix. Serve immediately.
Yield: 11 servings Nutrition per 1 cup serving: 185 calories, 8g fat, 2g saturated fat, 175mg sodium, 15g carbohydrates, 1g fiber, 16g protein
